Why do pies only get the claim for fame when it comes to streusel topping? Well that has changed… and I did get inspiration from Martha Stewart (per usual). I found the recipe for browned butter banana bread here (the Amateur Gourmet) and here (Joy the baker). I took these three pieces of recipe inspiration and came up with these yummy mini-cupcakes.
I was really intrigued by using browned butter in my baking, I usually will brown butter with sugar and fruit to use as a topping or filling but I never thought to just brown the butter on its own.
These cakes can also be used as a break from all the chocolate from Easter. There is fruit and oats in these treats and Easter chocolate usually lacks that stuff unless you’re eating granola with chocolate and that would make me a little sad. Sad enough to whip up something sweet in the kitchen just for you! But since there is no such thing as snapping my fingers or tapping my toes to be en route to your kitchen… you will have to drool over these photos until you decide to turn up that dial on your oven!
Let this post be a reminder that creativity can start anywhere and that one flavour or trend that belongs to a particular baked good can belong to all baked goods! Peace to all pies, cookies, cakes, squares, cupcakes and brownies… you are all equal in my books!
