Vanilla Vanilla Cupcakes


I decided to keep it simple. I have been filtering all my creativity into dressing and filling cute little cupcakes a lot lately which is so much fun and decided I wanted to keep it simple and work  on a simple vanilla cupcake with a simple icing. I found this recipe at Bakerella and this one at Smitten Kitchen two very awesome recipes. I took them both and made my own version that is fairly similar to each respected version.

 Now don’t write off the parchment paper lined cupcake tins too quickly. It is not as hard as it looks… it is a little frustrating but if you have an extra 5 minutes, cut the parchment paper into squares that just cover the cupcake holes. Use your fingers to press into the tin a little. Once you have pressed lightly into the tin scoop your batter into the linings. You will see that the lining SHOULD just fall into place. That is when it may become frustrating… but be patient!!

Remember there is always a sweet ending!! The sweet ending in this case being cupcakes…

 The other thing I did to these mini loves is brushed them with a simple syrup (equal parts sugar and water) to keep them super moist! They stayed SO moist the rest of the day and onto the next day!

 Buttercream is sometimes a pain to make when I am in a rush. I have been trying to figure out an icing recipe that I can use when I am in the ‘buttercream rut’. The icing I made for these cupcakes is the solution. I finally developed a simple solution that doesn’t involve shortening! It is possible, and this icing tastes super good and is just as fluffy as the store bought kind except it is homemade. Maybe there is some sugar and fat…but whats new

  1. Hey Anna,

    Just a tip about the parchment. if you happen to have two of the same size cupcake/muffin tins, I find the most effective way to get the parchment to stay put is by lining up the parchment squares over their designated little cupcake areas and then carefully stacking a cupcake/muffin tin of the exact same size on top so that it perfectly presses the paper into the holes. Then put the stacked cupcake tins into a preheated oven for ten minutes… once you remove the top cupcake tin the parchment papers will be perfectly shaped and easier to handle.
