Vegan Pumpkin Cookies

The leaves are changing colours, sweaters are feeling cozy and pumpkin just has to be in everything you make…well at least that’s my logic. This can only mean one thing, Fall is in full swing!

 These cookies have more of a muffin texture because there is so much moisture with the banana and pumpkin. I took this recipe and changed it a little. I used a banana instead of using an egg.

I thought I would toss in a photo of my new kitchen island! I am so excited to have a little extra room in my kitchen! The lighting is a little funny for photos, but I will work on that for next time!

A post about pumpkin and fall is not complete without the mention of Thanksgiving! Thanksgiving is this upcoming weekend and this recipe is sure to please any vegan eaters that want a treat!

  1. These look autumnal and delish… I can smell the pumpkin and cloves from my desk!! And love the leaves in photos. How do you create the recipe image? It looks like a clear piece of parchment paper over the photo… well done 🙂
