During my most recent time abroad I created journal entries and lists of food memories I experienced in all of the countries we visited. As expected, every country had unique flavours, and dishes. Being invited into homes of the locals for dinner, and dessert was a surreal culture and culinary adventure!

The story of Lamingtons for me began in New Zealand where we stopped at a grocery store to get materials for packing a lunch to eat on an island we planned to do hiking on. At the store there were colossal lamingtons. Lamingtons covered in chocolate or raspberry coating. Since we knew we’d be hiking we figured we needed the extra calories.

I decided at this moment in my life I needed to make these petit four-esque treats vegan friendly.

You can replace the coconut milk with cold water. I usually do that in order to save money, the cake turns out just as delicious!

Vegan Chocolate Cookie Cake


This is a post I have been meaning to write for a while, it is dedicated to my sister who returned from Mexico about a month and a half ago. I made her the cake that has everything she loves in it: chocolate, cake, cookies, and frosting. She was eyeing my blog on her trip and couldn’t wait to return to get the chance to sample some of my goodies.

I mean why not put cake and cookies together! This cake is the end result, and it was delicious.



The woven fabric that I used for the pictures is a gift that she brought back for me. It was super lovely and beautiful and I will totally use it in photos since it just makes the food pop!



I am so happy my sister had an amazing trip and I look forward to hearing more and more about her adventures, there are way too many for just one evening.



The next challenge is resisting a slice of chocolate cake filled with cookie dough balls, and a layer of cookie crumbs coated in chocolate ganache. It is a challenge I think I would always loose, as long as it is a slim slice everything will be alright!

I definitely recommend making this cake for any celebration, it is not too heavy but it is totally delicious! Thanks for stopping by and see you soon!

Easiest Vegan and Gluten-free Blondies

Parastoo always used to send me and many others an email titled “Thought for the day”. This email always included a lovely quote like “Individually, we are one drop. Together, we are an ocean.” – Ryunosuke Satoro. I fondly remember these quotes when backpacking through South East Asia. Whenever I checked my email (not very often) I had a number of these thoughts piled in my inbox and it was such a treat to read inspiring quotes to encourage me to keep on trekking on my own adventure.



Baking vegan and gluten-free can be difficult if trying to blend ingredients together where the end result is purely delicious. I haven’t really experimented too much on the gluten-free side of things but have been curious.

I am lucky in the sense that I don’t have any sort of allergies or foods that I absolutely can’t eat. But I love learning about different ingredients and how to blend them to make something delicious that everyone can eat, allergy or no allergy! Feel free to share any tasty treats that are vegan and/or gluten-free, I love seeing new recipes.



These blondies are also quite wonderful because they are also costed for anyone participating in Live Below The Line. It is my second recipe of three that is costed for an individual trying to eat for only $1.75 a day from April 29-May 5. It is a great cause that everyone should totally check out!

These brownies are super delicious, I love peanut butter and I love how the chickpeas work as a binding agent so no eggs or flour are needed.
